
For these two lunch boxes I used:
1 400g tin of kidney beans,
10cm of cucumber,
half a red pepper,
1 carrot,
8 cherry tomatoes,
2 mushrooms,
and some mixed nuts.
You could also add lettuce, radish, red onion, chick peas, seeds...
Dress with some vegan salad cream or mayonnaise.
And don't forget your fork!
